I decided to make this today because it was a super sunny day and I feel like I have been eating a lot of rubbish recently so wanted something light and green. I love anything with a Greek vibe to it and as this had olives and feta I thought it was perfect plus I love new potatoes.
This is a great one pot dish and takes little effort you just bung it all in the roasting tin and roast until it's done. I found the recipe on BBC good food website but made a few adjustments as the olives and asparagus were cooked for too long and shrivelled up to nothing , so I have adjusted to the recipe to add them towards the end so they are still plump.
