Today is Day 2 of the snow, otherwise known as the beast from the east 2. Torbay never gets snow and when it does it is barely there and neve settles. Well.. two weeks ago it snowed in Torquay and did it snow!! The whole of the south west was at a stand still, shops were closed or empty and the roads were a no go and so dangerous I couldn’t get into work. This was dejavu yesterday when I woke up to a lot of snow that had settled and it continued to snow all day and today the snow was so deep that yet again I could not get in to work. Yesterday I stayed indoors and sorted my room out and put my easter decorations and twig tree up, so today I thought I would actually enjoy the snow. The snow was so beautiful so i went out and took some cute pictures. I even built a snow man and laughed at dads attempt! Spent a lot of time throwing the ball in the snow for my dog to dig back up and eventually did some Easter themed baking.
I love easter and easter baking because it’s so cute! Bunnies, eggs, chicks and baby animals as well as lots of scrummy food and chocolate. One of my favourite easter treats are mini eggs! Today I decided to make some mini egg rice Krispy squares. I used Nigella Lawsons marshmallow rice Krispy squares recipe because I have used this recipe before and it tastes just like the squares bars you buy in the supermarket. I used Nutella’s recipe and added a few extras to make it my own, I also addded melted chocolate on top as well for an extra treat. This recipe is so quick and easy! I stupidly didn’t buy enough marshmallows so had to half her recipe and use a smaller tin but they still came out great! I will be posting a few more Easter recipes in the next few weeks as well as some pictures of the celebration cakes I have been making. Keep on reading for the recipe below:

I decided to make this today because it was a super sunny day and I feel like I have been eating a lot of rubbish recently so wanted something light and green. I love anything with a Greek vibe to it and as this had olives and feta I thought it was perfect plus I love new potatoes.
This is a great one pot dish and takes little effort you just bung it all in the roasting tin and roast until it's done. I found the recipe on BBC good food website but made a few adjustments as the olives and asparagus were cooked for too long and shrivelled up to nothing , so I have adjusted to the recipe to add them towards the end so they are still plump. I have been wanting to make these hidden Creme Egg centre cupcakes for quite a while now and finally got round to actually making them on my day off. The ones I actually made didn't actually have the hidden Creme Egg centre because Sainsbury's had run out of mini Creme eggs, so I just filled the centre with teaser spread and put half of a large Creme Egg on top.
I really like how they turned out and the chocolate cake was very light and fluffy and chocolatey as well as being moist. The only thing I am not completely happy with was the buttercream it seemed a little grainy and thick not as light as I would of liked, I am not sure why but I will try and fix that next time. These are pretty easy to make and are very chocolatey and a special treat for Easter. As Easter is coming up in less than a month I thought I would start my Easter baking with something a little less in your face but still with the easter theme and that was carrot cake cupcakes.
I found this recipe on Jamie Oliver's website and the cupcakes came out great but the cream cheese frosting was awful! I wanted something that you could pipe on top and look pretty but ended up with a drippy mess. Next time I will try a difffernt recipe for the frosting so that I can pipe it. The recipe below is for the pipeable cream cheese frosting I will use next time. These are pretty quick and easy to bake and are almost healthy and I think they look really cute with the little chocolate carrot on top. I am in love with these cookies! They are you far the best cookies I have ever had! They are very chocolatey and have the best texture! Crunchy on the outside and fudgy on the inside with melted chocolate pockets. I love how these look with the Gooey melted Creme eggs on top!
I also love that this recipe can easily be adapted with any kind of chocolate on top, you would do Reece's cups chopped and melted, these are my next cookies to make! Another idea is chopped snickers or mars bars placed and melted on top of the cookies. These cookies are very easy to make but the dough needs to be put in the fridge for an hour to chill. Once these delicious cookies are out the oven and firmed up a little they are perfect to eat and trust me you won't be able to stop and just one!! Carry on reading for how to make them: |
