This morning whilst lying in bed relaxing my mind began to day dream about food (as usual). I wasn't thinking about breakfast, I was thinking about cake! I suddenly had the urge to do some baking! I have been feeling a bit unwell recently and have either been off sick, at the Drs or hospital, sleeping or struggling through work. I have literally had no energy at all (even less than usual) so baking has been put to the back of my mind.
A few weeks ago I saw a recipe for Milkshake cupcakes which I loved the look and sound of! I immediately went to the shop and bought the ingredients I needed to bake the cupcakes but unfortunately I had ran out of energy by the time I got home so didn't end up baking them! I still haven't made them but I assure you that Banana Milkshake Cupcakes will be baked and on the blog soon! So, this week I am on holiday from work (woohoo!). I am not going anywhere and have not made many plans (other than more hospital appointments) as I want to use this week to rest and recover and try to get my immune system back up so I hopefully don't feel ill again any time soon! Lots of water, homemade fruit smoothies and sun are the plan! I am very happy that today is the day I bake! I have no plans at all so today seems perfect! I usually bake depending how I feel that day, what I fancy, seasonal trends or what I have been inspired by. I am not feeling like Banana Cupcakes today so that has been out on hold. I fancy something really moist, chocolatey and full of nuts. I immediately remembered a post I saw from Jo Wheatley weeks ago for a Nutty Mocha Loaf which looked delicious! I began trawling the web to find the recipe which I found. But in the process also found her recipe for a Very Squidgy Moist Chocolate Loaf which looks so chocolatey, fudgy and squidgy I knew I had to bake this right now!! But I also wanted to incorporate the nutty and Mocha element as I love coffee and chocolate together just as much as I love chocolate and nuts! So I decided to make a mixture of the two recipes.
