Today I have been making cupcakes.. a fairly usual thing for me to do on a Sunday but today I felt I needed to do it even more to cheer myself up! I am poorly again! My stupid immune system hates me at the moment and I keep getting virus's and infections which require me to go on antibiotics. Having a temperature and infection really makes me feel awful! It pretty much wipes me out until the antibiotics start to work! This brings me down a lot.. as I seem to be ill all the time recently!
I'm quite easy to cheer up but baking makes me very happy, it doesn't take much energy ( I can sit down on my bar stool) can be therapeutic and produces something beautiful at the end! So while I have been laid up in bed I have been thinking about what type of Cupcakes I want to make.

As my birthday was coming up soon...( I don't know if you've noticed) I thought I better start thinking about what I want my birthday cake to be this year. And yes I know it might sound a little weird or sad baking your own birthday cake but I actually love doing it! It means I can go all out on a cake that know I will love and can make it exactly how I want. I love baking cakes for other people but there is something satisfying about making one for yourself.
Last year I made a triple layered chocolate, caramel and vanilla drip cake (shown below) that was great but the chocolate cake was a bit dense and dry which is disappointing plus I still haven't got the drip on a drip cake right yet. This is by far my favourite salad! I have made this before a few years ago and loved it but just never got round or making it again. It is pretty easy and simple to make but the chicken needs to be marinates over night for the best flavour. I am a big fan of a salad but think they can be very samey and boring but this is not one of them!
The dressing brings this salad to life and it has lots of flavours that I like! The only thing I would add to make it even better is some stoned green olives. I found this recipe of the goodtoknowrecipe website and I halved it to take for my lunch for the past two days. I cooked all of the chicken and had it cold but it is much better warm. If you are looking for something different to take for your lunch give this a go!! This isn't really a recipe but a cheats guide to quick tasty Cronuts. I came across this when trying to find Cadbury Creme Egg recipes that I can make for Easter. I saw doughnuts on Pinterest but could not be bothered to make and prove doughnuts from scratch I then remembered seeing an easy Cronut recipe previously using shop bought crossaint dough. If you do not know what a cronut is it is a cross between a doughnut and croissant it was a new craze a little while back.
I have never tried one until these so don't have anything to compare them with but I think they were delicious! These reminded me of yum yums, I love yum yums and if you do too you will love these! I found the recipe on the ITV website and adjusted it so that I did not have a filling and just the glaze on top. These take such little time to make and are so delicious and moreish I would urge you to give them a try! I decided to make this today because it was a super sunny day and I feel like I have been eating a lot of rubbish recently so wanted something light and green. I love anything with a Greek vibe to it and as this had olives and feta I thought it was perfect plus I love new potatoes.
This is a great one pot dish and takes little effort you just bung it all in the roasting tin and roast until it's done. I found the recipe on BBC good food website but made a few adjustments as the olives and asparagus were cooked for too long and shrivelled up to nothing , so I have adjusted to the recipe to add them towards the end so they are still plump. I have been wanting to make these hidden Creme Egg centre cupcakes for quite a while now and finally got round to actually making them on my day off. The ones I actually made didn't actually have the hidden Creme Egg centre because Sainsbury's had run out of mini Creme eggs, so I just filled the centre with teaser spread and put half of a large Creme Egg on top.
I really like how they turned out and the chocolate cake was very light and fluffy and chocolatey as well as being moist. The only thing I am not completely happy with was the buttercream it seemed a little grainy and thick not as light as I would of liked, I am not sure why but I will try and fix that next time. These are pretty easy to make and are very chocolatey and a special treat for Easter. |
